Xanthan gum is a natural polysaccharide produced by fermentation of sugars by Xanthomonas campestris bacteria.

Formula

White or light yellow powder, well soluble in water, forms viscous solutions even at low concentrations. Has thickening, stabilizing and emulsifying properties.
